GOLDEN MILK COOKIES

You know those uber-trendy lattes that you've seen all over the 'gram? This is the COOKIE version. I've been making myself turmeric lattes ever since it turned chilly, and one night while sipping the yellow stuff (while soaking in a bubble bath, I might add!), the idea hit me to turn them into warm, ooey-gooey spiced cookies. First things first, I got on Pinterest. Surely SOMEONE has had this same thought, right?? WRONG. There is not one recipe for Golden Milk Cookies anywhere to be found. Well, not until these! Lucky for you, I sacrificed my Saturday afternoon to test the waters and see what I could produce. The result? A tender, perfectly-spiced, chewy in the middle, crispy around the edges, golden specimen. And now I feel like it is my civic duty to bring these cookies to the internet. The world NEEDS these cookies. Why, you ask?




I want you to close your eyes. Imagine you just received a BIG ole' hug from your grandma, that is what these cookies taste like. Like crunchy, autumn leaves beneath your feet. Like coming home from a long trip. Like a warm campfire, with its burning, glowing embers. Like a kiss from a puppy. If that description doesn't make you want to gobble 86 of these up right away, these 5 benefits of turmeric sure will!


1. Turmeric is LOADED with antioxidants that fight cell damage, protecting your body from oxidative stress.  

2. Research shows that curcumin (the active ingredient in turmeric), is known to have anti-inflammatory properties.

3. It has immune-boosting properties that can help fight colds.

4. Turmeric promotes healthy digestion, and has even been known to improve the digestion of fat.

5. There is evidence of cancer-fighting benefits in turmeric.


Makes you want to add it to everything, right? I've got a curry recipe that uses a whole lot of the stuff - maybe one day I'll share. For now, on to the COOKIES!




Keep in mind, I kept these dairy-free (finding dairy-free chocolate is NO joke), but you could totally sub gluten-free flour for the all-purpose to make them GF, or sub flax eggs for the two eggs to make them vegan - don't be afraid to make a recipe work for you! Also I linked the turmeric that I use from Suncore Foods. It is the BEST and cheapest I have found yet - and better yet, WOMEN OWNED! Feel free to use what you can find, but do yourself a favor and get a bag of theirs to keep on hand (as well as check out their other amazing superfood selections)!

GOLDEN MILK COOKIES

Yields: 12 Cookies
Prep Time: 10 Minutes
Cook Time: 12 Minutes

Ingredients

1 1/2 cups all-purpose flour
3/4 cup coconut sugar
1 TBLS baking soda
1/2 tsp salt
2 eggs
1/2 cup melted coconut oil
2 tsp cinnamon
1 tsp dried ginger
1 cup dark chocolate (chips or disks)


Directions

Turn oven to 375 degrees. In a large mixing bowl, add eggs, coconut oil, coconut sugar, baking soda, salt, cinnamon, ginger, and turmeric. Using either a hand-held mixer, or your stand mixer, cream together these ingredients, until completely smooth. Gradually add in the flour a 1/2 cup at a time, mixing slowly until just combined. Don't overmix here. Fold in your chocolate. Chill dough in mixing bowl for 20 minutes. Using an ice cream scoop, scoop out dough onto an ungreased cookie sheet. Do not flatten, they will do that themselves as they bake. Bake for 12 minutes, take out and let cool on pan for 3-4 minutes. Transfer to cooling racks with a large flat spatula. Enjoy warm!

I recommend doubling the batch if you plan to share...these are addictive! Rest easy though and enjoy the dang cookie - remember all of those health benefits you are reaping?!

BLUEBERRY-COCONUT MUFFINS

Is it just me, or does this dreary weather put you into a bit of an emotional funk, too? I feel like I could cry & laugh at any moment. Cry from the cold/rain/overall gloominess, and laugh because I know I have at least 3-4 more MONTHS of this crap and I better make the most of it. HASHTAG MIDWEST WEATHER. BOOOO. Sitting here at my desk day-dreaming (and shivering) about these BLUEBERRY-COCONUT MUFFINS that I tested this past weekend! Let’s just say, they passed the test. My latest recipes have been VERYYYY pumpkin purée heavy (because fall, DUH) - it felt good to bake with berries again!
